One of my hobbies is baking. In fact, it was something I got interested in when I was a kid. I used to make ramen noodle soup by myself, and the first cake I baked (well, tried to) was a chocolate chip cake that you could actually do in the microwave. It didn’t turn out very good—in fact, it was more like a Bundt-shaped, giant cookie!
 
Cooking is a great skill to have, so if you feel up to a culinary challenge, try this recipe out! Just make sure you have an adult around to help.

Mexican Lasagna (a big taco-pie)
 
4 large tortillas
1 package Morningstar Farms Meal Starters Grillers Recipe Crumbles
1 medium onion, diced
1 packet taco seasoning
2-3 small or medium tomatoes, diced
A handful of chopped cilantro
Shredded reduced-fat cheddar cheese
Reduced-fat sour cream
Salsa
 
Preheat oven to 350 degrees (Fahrenheit) and spray a 9” x 13” pan with cooking spray.
 
Cook onions in large skillet over medium high heat until softened. Add burger crumbles and cook until heated through. Add taco seasoning and water (according to packet directions). Cook until most of the liquid evaporates, but not until it completely dries out.
 
In pan, layer two tortillas, overlapping so they cover the bottom. Cover with half of the ground crumbles mixture. Sprinkle a handful of cheese, followed by spooned dollops of salsa and sour cream. It’s up to you how much you’d like to use. Then sprinkle half of diced tomatoes and half of the chopped cilantro. Cover with remaining two tortillas and repeat layering process. Bake for 20-25 minutes.
 
Let cool slightly, serve, and enjoy.
