This recipe is really easy, delicious, and will make your house smell so good. Please make sure you have an adult around to help as you will be working with a hot oven!

Miss Wilona's Famous Banana Bread

3 very ripe and spotty bananas mashed to baby food consistency
1 egg
¼ cup oil (vegetable or canola)
¾ cup sugar
1 ½ cups flour
1 ½ teaspoons baking powder
Pinch of salt
¼ teaspoon cinnamon
¼ teaspoon baking soda
1-2 tablespoons ground flax seed (optional)
Chocolate chips (optional and the quantity is up to you)

Preheat your oven to 350 degrees. Grease a loaf pan (I like to spray it with Pam for Baking).
In one medium size mixing bowl, mash bananas and add egg, oil, sugar, and mix well. To this wet mixture, add flour, baking powder, salt, cinnamon, baking soda, and flax seed, if using. The flax adds lots of healthy fiber without affecting the taste or consistency, but it’s your call. Mix all this together with a fork till it becomes a nice lumpy batter and all the dry ingredients are well incorporated. You can add chocolate chips at this point if desired.

Pour into the prepared pan, tap it on the counter a couple of times to pop any air bubbles lurking inside, and bake on the center rack of your oven for 50 minutes. That time has worked best for my oven, but feel free to adjust more or less. Test for doneness with a toothpick if in doubt. The finished product should have a rich amber colored crust with a nice sheen to it. Let it cool for 10 minutes and then invert from the pan. Enjoy!
